How to pull the audio out
Choose your video file, leave the output on MP3 and press convert. The audio track is copied out and encoded, the picture is discarded.
The file keeps its original name with an mp3 extension, so a folder of lectures or interviews stays organised.
Why 192kbps
It is the point where speech and most music are indistinguishable from the source for normal listening, while the file stays around one and a half megabytes a minute.

Extraction is not the same as re-recording
A video file already carries its audio as a self contained track. Pulling it out reads that track directly rather than playing the video and listening to it, so nothing is lost to a second pass through a microphone or a virtual cable.
Screen recording a video to capture its sound, by contrast, goes through your system mixer and picks up whatever else is playing. Extraction avoids all of that.
The only quality step here is the MP3 encode itself, which is why the bitrate choice matters and the source file's own quality does not change.
What the audio inside a video usually is
Most MP4s carry AAC audio at 128 to 256 kbps. Phone recordings sit at the lower end, and footage from a camera or a proper mixer at the upper end.
MKV files often carry AC3 or DTS from a disc source, which have more channels than a stereo MP3 can hold. Those are folded down to stereo during conversion.
A file with several audio tracks, for example a film with two language options, converts using the first track. Only that one becomes the MP3.
